A visitor who read the post I made yesterday about the Barbequed Beef asked me to list the ingredients for the sauce. It's almost the same as for the Barbequed Beef recipe (without the beef) with a few minor modifications. I think you could make it without the chipotle peppers in adobo sauce. If you want a little heat, add some tabasco sauce. Or some jalapeno peppers diced fine.
Barbecue Sauce
Adapted from a recipe in Simply Stews by Susan Wyler
1 - 2 tbsp. olive oil
3 small onions, chopped
12 ounces water
½ cup plus 2 tbsp cider vinegar
½ cup ketchup
3 tbsp. light brown sugar
1 tablespoon molasses
1 ½ tbsp. Worcestershire sauce
2 teaspoons ground cumin
1 teaspoon dry mustard
¾ teaspoon dried marjoram
1 tsp. salt
½ tsp. freshly ground pepper
3 – 4 chilies (from can of chipotle peppers in adobo sauce)
In a large saucepan, heat the oil over moderately high heat. Add the chopped onions and cook, stirring often, until golden brown, about 7 minutes. Add the water, brown sugar, molasses, Worcestershire sauce, ground cumin, dry mustard, dried marjoram, salt, pepper and chilies. Bring to a boil, reduce heat, simmer until thickened.
Where did you find adobo peppers in chili sauce without flour?? what brand did you use?

ReplyDeleteJust a quick question, what about the worcestershire sauce? I have never found a gluten free brand. Which one are you using?
Slacker Mom - I've already thrown the can out (from the chiles in adobo sauce). I read the ingredients and assumed it was GF. And I felt totally fine after eating it, which is a good indication that it was in fact GF, at least for me.
ReplyDeleteGluten free suzi - I used Lea & Perrins which, if you google it, appears to be GF, at least when made in the US. But I also know that Annie's makes a GF worcestershire sauce - I haven't tried it, but it might be worth looking into.
Annie's may be GF, but it looks like it depends what's hidding in the Soy Sauce.
ReplyDeleteThey have it listed as vegan & dairy free, oddly enough, but do not mention GF status like they do on other products. I'm guessing its not GF.
BTW, Lea & Perrins worcestershire is suppose to be GF in the US, but not in Canada or the UK.

I wonder whether there is another ingredient that could step in for the worcestershire sauce. Any thoughts?
ReplyDeleteI know some adobo sauce has wheat in it...the one I had in the cupboard did....now I will check the other brands..maybe some don't add wheat flour.
