Gluten Free Homemade Apple Pie


This is a picture of the apple pie I just baked for our Thanksgiving feast! I had all I could do not to break right into it, but it's for Thursday, so I have to wait. If it tastes anything like it looks, I'll be very pleased.

I had included the pie in my Thanksgiving menu round-up here, prior to making it. Now that it's finished and waiting to be served on Thursday, I wanted to post the picture. If you decide to follow the recipe, go here. While the crust per the recipe is probably delicious, I wanted to play around with some of the flours, so I made some changes in the ingredients. Where it calls for 1/2 cup brown rice flour, instead I took 2 tbsp sorghum flour, 2 tbsp teff flour, and 2 tbsp sweet rice flour and placed them in a 1/2 cup (measuring cup), then filled the rest of the 1/2 cup with brown rice flour. I used xanthan gum, not guar gum (recipe calls for either). I used Earth Balance instead of butter. I didn't brush the top with egg white.

  4. Where do you find teff flour? I've
    been working with Annalise Roberts' book, and she calls for teff flour in a few recipes. But I can't find it!!
