Gluten Free TALT Sandwiches



Yesterday, I posted about my weekly menu. For dinner last night, I made TALT sandwiches. I imagine you might be wondering what TALT stands for.

T = Tempeh Bacon
A = Avocado
L = Lettuce
T = Tomato

It was delicious. The picture is open-faced so that you can really see the different components. We also had coleslaw and Spicy Sweet Potato Fries. I used Vegennaise to slather on the sandwiches and for the coleslaw dressing (which also included apple cider vinegar and agave syrup). And there were leftovers, so I know what I'm having for lunch today!

    rice meatballs made with ground turkey, can stewed tomatoes,onion,
    bell pepper(1/4 th)pepper,etc.
    served with brown rice and veg's.
    Not too original-but tomorrow stuffed
    peppers in the Crockpot.

    That looks pretty amazing, I am going to try it. I've been veg 20 years, GF only 6 months, so it's still a bit of a struggle combining the 2 cuisines (thank goodness for Thai food!). What brand of tempeh bacon did you use? I thought the one in my health food store contained soy sauce made with wheat.
