Gluten Free Baking & Cooking Classes

Teaching people how to cook and bake gluten free is a great fit for me. Teaching runs through my veins. I've been a teacher since I graduated from Boston University in 1976 with a degree in music education. I pursued and received a graduate degree in Early Childhood Education from Arcadia University in 1980. Put me in front of a group of people (kids or grownups) and let me teach what I know best, and I'm a happy camper.

When I went gluten free after being diagnosed with Celiac Disease in early 2006, I immediately began transferring my love of all things cooking and baking to my new gluten free life. Now, my passion has been given a new platform. I'm teaching gluten free cooking and baking classes that help people embrace living gluten free.

    Hi there!
    I have a question...I am gluten free and haven't had an episode in awhile. However, tonight I went to Mexican food and had fajitas. It came with salsa and guacamole served in small taco shells. I was chatting with my friends and enjoying the meal and didn't realize until the drive home that the shells may have been made of flour instead of corn. Do you know if this may be the case?? I was thinking of asking the restaurant tomorrow, but wanted to see if you know what is the usual. ALSO, what (if any) are some tips for getting throw an outbreak if I did consume flour. (I have been gluten free for close to 4 years and haven't had more than accidental crumbs or sauce since).

  2. Hi Rebekah,

    I would make sure that the taco shells were not fried in a fryer that fried anything containing flour. And also ask about the ingredients in the taco to make sure they don't contain flour.

    I can't speak to your question about tips for what to do if you accidentally ingest gluten. I wish I knew. If you find out, please let me know. Thanks!
