Gluten Free Multi-Grain Wraps


It's a wrap. A homemade gluten free pliable, flexible, bendable wrap. Oh, and did I mention that it was delicious to boot? Breads From Anna does it again! I had a little help from my Chef Pro Tortilla/Flatbread maker. She is worth the price of admission, if only because she makes the best friggin' gluten free wraps I've ever tasted. I mean, look at the damn things - they bend! They wrap! And it's one of the quickest ways I know to get homemade gluten free bread.

I'm a huge fan of Breads From Anna bread mixes. That's why she gets her very own place in my blog menu. For these wraps, I used her Gluten Free, Yeast Free, Corn Free, Dairy Free, Soy Free, Nut Free and Rice Free All Purpose Flour Blend. I followed the recipe on the Breads From Anna website and met with great success.

One night this past week, I made the wraps for dinner and filled them with Middle Eastern Chickpea Burgers and Tomato Mint Chutney. Both of these recipes come from my new favorite cookbook "The Cancer-Fighting Kitchen" (see my recent review). I also added Tahini Lemon Dressing. Don't let the name convince you not to look at this book. Honestly, I haven't made anything from this book that isn't sensational. The author knows how to take ordinary ingredients or those that you might not otherwise think to combine and marry them in extraordinary ways.

When I made the chickpea burgers, I will confess to being a little (well, maybe more than a little) reluctant to use fresh ginger. I've made chickpea burgers (felafel) about a million times and have never used ginger. It was AMAZING, that's all I can say. My tastebuds woke up and did a jig, and that was just when I tasted the batter.


And let me introduce you to Tomato Mint Chutney. I took a slight detour from the recipe, but only slight. Where she recommended using diced canned tomatoes, I used fire-roasted diced canned tomatoes. And they absolutely made the dish. The fresh mint also took a walk on the red carpet. All eyes turned, trust me. Tasting this chutney was one of those "I can't talk" moments.



These wraps are definitely going to make regular appearances in my menu. Any gluten free bread that takes minutes to make is a keeper in my book. Thank you Breads From Anna!

  4. those look great! so do you pour the batter in the chef pro, or do you roll them out and then put them in the cooker? Do tell us more! :)

  6. Have you ever tried to make these with anything other than Anna's? Because I can't seem to find those mixes around where i live. Just wondering! But they do look fabulous!
